Whenever we have leftover BBQ pork (or chicken), you better believe we’re making these nachos! Ready in 20-30 minutes, they’re a simple, colorful and flavorful meal.

Howdy, Reader,

I was born and raised in Memphis, and as a Memphian, I get my barbecue fix at our favorite BBQ joints whenever I’m visiting. I also enjoy barbecue at sporting events because it’s part of the tradition. (If you’ve ever been to a game in Memphis, you know. If you haven’t, you should!)

Barbecue Nachos are one of those dishes that I absolutely adore, but I never considered making at home until this past year. While I’m not glad that the pandemic forced us to stay home for an entire year, I am thankful that it helped me think outside the box, as well as make some of my favorite dishes at home.

These nachos are one of those recipes. We tend to make them for dinner (because the girls love them and so do we), but you can also serve these as an appetizer to guests or your family. The key is using leftover pulled pork so that they’re ready quick!

Happy cooking,
