πŸ’ƒπŸ»New Recipe Alert!πŸ’ƒπŸ»

Hi Reader,

Last week, I participated in a food blogger collaboration called Freaky Friday. In it, participants are assigned another blogger. We cook one of their recipes from their site, photograph it as our own and then publish our posts on the same day.

It’s a LOT of fun and a great way to find new blogs to enjoy, as well as delicious new dishes.

This new-to-me recipe is from Angela at LeMoine Family Kitchen, and oh my word, is it good!

If you’re in the market for a new pasta recipe that’s ready quick, you’ve got to try out Tortellini Butternut Squash Pasta with Pancetta and Spinach!

Why we love this recipe:

  • It’s ready in 30 minutes or less.
  • You can use pre-chopped butternut squash to save time!
  • It’s seasonal, wonderfully flavorful and stunning, too!

If you like butternut squash, this tortellini recipe makes for an excellent weeknight dinner. It also would be a lovely easy date night at home dish, too, if you’re looking for something like that!

Have you ever eaten a dish with butternut squash, pancetta and spinach together?

It makes me so happy when you make my recipes! If you make this one, reply to this email, or snap a photo and tag me (@speckledpalate) on Instagram!

Happy cooking,
Erin
