Do you love pumpkin recipes at breakfast? Me too! Here are a few delicious and flavorful recipes to serve throughout pumpkin season.

Howdy, Reader,
For some reason, I always skew toward pumpkin breakfasts in the fall because, well, I dig pumpkin this time of year.
However, if pumpkin was easier to find in non-fall months, I’d totally eat pumpkin breakfasts and dishes at other times of year, too. However, since they’re sometimes few and far between, I tend to enjoy them while I can. 😩😂
If you’re a pumpkin breakfast person and are looking for a new recipe (or five), I’ve got some ideas for you:
- Pumpkin Waffles with Cinnamon Maple Syrup: We are low-key OBSESSED with these waffles in our house. From the fluffy batter that crisps up on the outside but stays soft on the inside to the drinkable infused syrup (that’s just two ingredients that you probably have in your pantry already), these waffles are a true fall treat!
- Pumpkin Spice Bread: This bread took a few months to get right, all because I wanted the spices to really sing. If you’re into pumpkin spice, this bread is for YOU! If you’re not, you should try my less spiced but still totally delicious Pumpkin Chocolate Chip Bread.
- Mini Pumpkin Muffins with Chocolate Chips: I used to make these for our daughters’ playgroups when they were little because they’re the perfect bite. If you’ve got little kids, these are wonderful. Also—they can help you measure ingredients to make them! And what’s more fun than that?
- Pumpkin Overnight French Toast Casserole: If you’re looking for a make-ahead breakfast, this is for you! Toss the ingredients together the night before and let them hangout in the fridge before baking. I can see this being a smashing success on a busy weekend or, you know, a holiday morning.
- Pumpkin Spice Pancakes: If you’re a pancake lover, you’ve GOT to try this seasonal variety of the classic buttermilk pancake. Full of awesome spice and pumpkin purée, these are a weekend delight that are easy to put together and enjoy. Don’t forget to serve with real maple syrup!
Now I’ve gotta know: Are you tempted to try one of these this coming weekend?
As always, happy cooking and baking!
