Whether or not you’re a morning person, breakfast is an integral part of the day. And starting off your day with a recipe that’s already made for you? Perfection.

Easy breakfasts are my JAM in 2021 because I have been struggling in the mornings so much recently.
For the last several years, I’ve been a breakfast smoothie person, combining a mixture of cashew milk, blueberries, spinach, cocoa powder, maple syrup and oats to make it, but this year, I’ve needed something more substantial.
If you’re looking for some breakfast inspiration, here’s some:
- Baked Oatmeal: This oatmeal is wonderfully comforting and adds in hazelnut and pecan flavors. You can also play around with these flavors and add dried or fresh fruit to your oatmeal, too.
- Granola: Did you know that homemade granola is incredibly simple to make at home? I’ve got two recipes on my site: Maple Nut Granola and Dark Chocolate Cherry Granola. Serve over yogurt or with your favorite milk.
- Overnight Oats: These are SO GOOD, and you can make a batch for the week on Sunday night. My girls love Peanut Butter Overnight Oats (and adding fun toppings to them.) I’m partial to Strawberry Overnight Oats myself.
- Christmas Breakfast Casserole: Yes, you can bake this ahead of time and simply reheat a slice in the microwave for yourself! We call this “Christmas” breakfast casserole because it highlights red and green peppers, and we normally eat it on Christmas morning, but you can make it any time of the year. It’s a filling and hearty meal.
- Vegan Blueberry Muffins: Our family is WILD about these blueberry-filled muffins! This is a perfect baked good for a Sunday afternoon that can easily be saved for Monday, Tuesday and Wednesday!
